Per Se
After traveling through every winemaking region in Argentina, PerSe decided to create wines which spontaneously express their land of origin, all the time avoiding any interventions that might hide their purity.
The winery's mission is to have their wines show each parcel as it is, without obsessing over technology or overusing resources but rather capitalizing on acquired knowledge and a respect for tradition.

Winemaking and ageing
Yeasts: native
Fermentation container: 500 liters vats
Maceration technique: soft pillages, one per day
It fermented with indigenous yeasts and the extraction was limited to very soft daily pillages, for 30 days. This type of work and maceration time gives tannins of superlative texture and fineness, which characterizes this wine and places it close to Iubileus.

Soil composition: the soil presents the classic deposits of calcareous material from the area, with abundant calcareous rock from the surface and in depth.

Type of viticulture: non-certified organic / sustainable. It is an organic vineyard -not certified- in which herbicides of any kind have never been used and the sanitary control is carried out with sulfur and copper.
Nutritionally, we only apply compost on spots according to vigor (cow or goat guanos composted with grape marc).
